It’s indulgent yet refreshing, cosy yet light, and perfect for a lazy weekend morning. Made with buttery brioche, softly spiced with cinnamon, and topped with cool whipped yoghurt, it’s a dish that feels like a treat without being too heavy.

This recipe serves 2, but it’s easy to scale up if you’ve got more mouths to feed.

French toast with berries and whipped yoghurt

Ingredients (serves 2)

For the French toast

• 4 slices brioche

• 150ml double cream

• 1 tsp cinnamon

• 2 tsp sugar

For the whipped yoghurt

• 250g Greek yoghurt

• 150ml double cream

Toppings

• Fresh fruit of choice (I went with blueberries, strawberries, banana)

• Drizzle of maple syrup

Method

1. Make the whipped yoghurt:

– In a bowl, combine the Greek yoghurt and double cream.

– Whisk until smooth, light, and slightly fluffy.

– Place in the fridge to chill while you make the French toast.

2. Prepare the French toast soak:

– In a shallow dish, whisk together the 150ml cream, cinnamon, and sugar until combined.

– Dip the brioche slices into the mixture, making sure each side is well-coated but not soggy.

3. Cook the French toast:

– Heat a non-stick pan over medium heat and add a little butter or oil.

– Fry the brioche slices for 2–3 minutes on each side, until golden brown and crisp on the outside.

4. Assemble:

– Stack the warm French toast on plates.

– Top with fresh berries and banana slices.

– Add a generous dollop of whipped yoghurt.

Finish with a drizzle of maple syrup.
